Low-Fat Fudge Brownies (Freezable)
vegetable oil spray
1 cup flour
1/2 c. + 1 Tbsp. unsweetened (Dutch process) cocoa
1/4 tsp. salt
1/4 tsp. baking powder
5 Tbsp. unsalted butter/margarine (can use low fat margarine)
1 1/4 cups sugar
1 large egg
2 large egg whites
1 tsp. vanilla extract
1 tsp. instant coffee dissolved in 1 tsp. hot water
1) Preheat oven - 350 - Coat 8'' suare pan with spray 2) In small bowl, stir flour, cocoa, salt, and baking powder 3) Melt butter, stir in the sugar (will have gritty texture) 4) Carefully stir in the dry ingredients, then, beat just until mixed. Spread mixture into prepared pan. Bake 20-25 minutes, until surface begins to firm around the edges. Toothpick should come out gooey. Cool on rack.
